You’ll never eat plain old pancakes again after trying this easy and luscious Pancake Casserole. Made entirely on the Pit Boss Platinum Series KC Combo, this sweet breakfast casserole features layers of thick, fluffy pancakes which are soaked in a sweet custard then baked on the grill and drizzled with chocolate chips, maple syrup, and powdered sugar.
Ingredients
2 Tbsp Butter
4 Egg
12 - 14 Pancakes
1/4 Cup Sugar, Granulated
1 1/2 Cup Whole Milk
1/2 Cup Chocolate Chips
Maple Syrup
Powdered Sugar
1 Tsp Vanilla Extract
1 ½ Cup Flour
1 Tsp baking powder
1 Tsp sugar
½ Tsp salt
½ Tsp baking soda
1 ¼ Cup milk
1 Egg
3 Tbsp butter, melted
1 Tbsp vegetable oil

Directions
- Fire up your Pit Boss Platinum Series KC Combo and preheat the griddle to medium-low flame. If using a gas or charcoal grill, preheat a large cast iron skillet over medium-low heat.
- Lightly oil the griddle, then scoop the batter onto the griddle, using approximately ¼ cup for each pancake. Cook 1 to 2 minutes per side, until golden brown. Set aside to cool for 15 minutes, then assemble the casserole.
How To Assemble The Casserole
- Lightly butter a 9” round, metal baking pan. Layer the pancakes evenly in the baking pan.
- In a large measuring cup or bowl, whisk together eggs, milk, sugar, and vanilla. Pour over pancakes. Cover with plastic wrap, and gently press down with your hand to ensure pancakes are submerged in liquid. Refrigerate at least 2 hours, or overnight.
